 SOOO here's to that!

 Lasagna Pizza Rolls


 10 pieces of lasagna noodles
 1 jar Classico Pizza Sauce 
1 small bag pepperoni (most of mine got eaten while I was cooking.. woops) 
1/2 onion, diced 
1/2 green bell pepper, diced 
1 egg 
16 oz small curd cottage cheese 
 2 cups mozzarella, divided in half(or as much as you want to smother on top of these bad boys...up to you.)
 1 cup Baby Spinach, cut up into small pieces 
1 tbs Oregano 
1 tbs of Basil 
1/2 tbs Garlic Powder 
Crushed Red Pepper Flakes.. If you're into le spicy like me. 

Otay. Throw yourself a pot of hot water and salt on the stove... tall enough to hold all those noodles. 

Then, In a medium sized bowl mix your cottage cheese, 1 cup mozzarella, 1 egg, Spinach, Oregano, Basil, and Garlic Powder. 

 Cut up those onions and peppers up and sprinkle some crushed red pepper flakes if you'd like. Toss it all up. 

 After your noodles are done... well..I couldn't figure out how to not make them get all sticky to each other.. soooo good luck with that. BUT pull one at a time and lay it on a piece of wax paper. Spread your cheese mix lightly on your noodle leaving some space at the edge of your noodle for them to grab on to each other and stay in roll form. Then, place your pepperoni on, spread apart a little (or your onions and peppers won't stick). Throw on a little bit of that veggie mixture. Now, roll that sucker up. Place in Pam'd baking pan. 

Continue til your rolls are gone! 


Cover with can of sauce. I rinsed out the jar with a tiny bit of water to make sure the noodles stayed a little moist and poured it over the top. Sprinkle remaining veggie mixture. Toss on as much mozzarella as you'd like. BAM. Bake at 350 for 20 minutes. 

Enjoy until your little belly explodes.
